Today is my wife's birthday! She turned 59 and asked for a prime rib dinner. That's my girl!
Bought a 10# roast at the Harp's yesterday. My butcher, Brandon had been slicing some thin ribeye steaks and he offered me what was left. I split it into two pieces, one for tonight's dinner and one for...
Time for a hot salmon smoke with cherry chunks. Been a minute for this one! This is my own rub that normally use as a dry brine, but it sure is tasty on the the same day!
The Better 9/10ths and I are back in Pensacola, for what we pray, is my mother-in-law's last session of chemotherapy. One thing my wife (Chey) has done is insisted on her mom doing a three day water fast (one before the session, the day of, and the day after). With water, she introduced bone...
The Better 9/10ths bought some wild caught coho for dinner, plus. We always get tail sections to grill and center cut for grilling after I slice off the belly meat (except for this wee piece) for cold smoking later.
A quick rub with my own blend along with some asparagus. Mmmm...
No dinner...
Friday night, 10 pm. Instead of being in bed, sleeping, I was starting a fire in the KJ for a 7.5# BB. The goal was to have it smoke overnight at 225-250° and to be ready for making pizza by 5 pm Saturday.

Whilst I was around about town yesterday, one planned stop was going to be at the HD (think orange) for some charcoal. Normally the Poplar Bluff store carries Royal Oak, but, there was an odd looking bag in its place. A closer look, and, hello! My favorite!
Ecclesiastes 1:9 ESV What has been is what will be, and what has been done is what will be done, and there is nothing new under the sun.
I know, I rotated a buzzard not too long ago, however, there is a huge reason for it, aside from the fact that it just tastes good!
My wife, (a.k.a. The...
For tonight's game we set out a couple of nice pork steaks from the NAS Pensacola commissary. The Better 9/10ths worked on a couple of twice baked potatoes with broccoli and cheddar, and rounded it out with a Greek salad and more of her sourdough bread.
The meat...

My father-in-law, TexasRay, gave me this many years ago. He used to use it on his KJ and thought I'd like to use it. Well, I don't and it's only collecting dust. Make an offer or trade.
The Better 9/10ths is already back in the swing of things and making bone broth. She's already made some chicken bone broth, but she wanted to make beef bone broth and asked if I could ask the butcher at the local Harp's store.
I rang the buzzer and out came Bxxxxxx. I asked about chicken feet...
A couple of days ago I ran the Joe up to about 800° to do a thorough cleaning burn of all components, minus the grates. Today I disassembled the thing. brushed all the parts down, and finished with the vacuum.
I now have it prepped and ready for some rotisserie chicken!
Spent the last two days emptying our storage units. Monday the Napoleon gas grill made it here and I used it for a tri-tip. Yesterday the KJ Classic came home. I spent some time cleaning them both (lots of dust).

It's nice to have the kids home!
Mind you, The Better 9/10ths and I have been in Florida on an extended stay for a two-fold purpose. The first was to go sailing for a while. The plan was sell the house and sail for a couple of years. Well, my back issues (thank you. USAF) has put a screeching halt to those plans. My immediate...
Lots of opinions out there, to be sure, and, I know this will likely strike a nerve with some folks here. That said, I've tried every one of these (and a few more I'll mention later) and, like most, I have an overall favorite, and a favorite I can get at any time. So, this is just my opinion...
There should be a trophy, medal, banner, something for the men who are roped into going to any store today or tomorrow!
God be with you, fellas or ladies!
I got up at 3am with my oldest, Jeromy, to both get a brisket in the MB gasser for tonight, and to spend a couple of minutes before he left for work. This was also so I could help him hone his brisket cookery. Yes, I probably should have been up earlier, but The Better 9/10ths and I have both...
