    Turbinado is great! I just used it for the first time on ribs last night. There were not any crystals on the meat after cooking for a few hours. I would be curious how it stands up to a seven day brine. Looks good for bacon.

    When I do my regular bacon I brine it for about a week. I use 1 cup coarse sea salt, 1 cup brown sugar, and 1/2 cup maple syrup(good maple syrup). Per 4 pounds of pork belly.     316 grade stainless steel for smoker build

    Hi folks. I was wondering if someone could clear this up for me. I am building a stainless steel smoker. I plan to use a 316 grade stainless steel. From what I have read this is the most preffered for cooking utensils. Or would I be better off using a 304 grade? Thanks

    bacon flavor profile

    Have you tried injecting the belly? I inject the maple syrup, real maple syrup, into the belly. Once on the first day. And then again on the third day. The last batch I did I used 1c brown sugar, 1c coarse salt(coarse sea salt), and 1/2c maple syrup. Good luck
