    I use 8 lbs of deer meat and 2 lbs of beef talo. I season and add 1 cup of water or so. I have 2 grinder plates. I believe they are 3/8 and 1/2. 1 thing I noticed is you hang your sticks which I have not done yet. Also, what type of casing do you use. I used the 23mm callogen.

    Thanks for this website! I don't have a problem stuffing deer sticks, salami's but they do not turn out after they have been smoked. They don't look or have the texture of store bought sticks/salami's. I want to take the sticks on fishing trips for snacks so I won't have the refrigeration. I...
