Hey, all. Decided to go with a hot and fast brisket at 300 and put the packer on at 930am this morning. It's been 5 hours and the brisket is at 183 on one probe and 170 on another. I haven't seemed to hit a stall yet. Is this normal? Should I wait to wrap? Should I wrap anyways? Is a wrap needed...
This is my rough plan of what to do and expect:
275-300 degrees
Mustard binder
Sprinkle with rub
Fat down towards heat source
Wrap in butcher paper at stall, usually around 160-170, as long as bark looks good
Finished when probe tender and jiggly
Rest for at least an hour in cooler...
With hot and fast, should I inject and/or wrap the brisket at all? Or should I follow a low and slow recipe, with just higher temperature and quicker cook times?
Couldn't find a definitive answer regarding wood amount to use. Some say the meat stops absorbing flavor after the first hour or two and some use wood all throughout the cook, so I'm not sure what to do. Am I better off using 1-5 palm sized chunks in the beginning of the smoke (depending on cook...

This is the recipe in question. I'm hoping to be able to put it directly on the grates but I'm worried about it falling through. Should I let it sit in the freezer for a few hours before putting it to smoke?
I'm hoping to make some spareribs and drumsticks next weekend, but the ribs cook at 225 for 5 hours and the drumsticks cook at 300 for a half on each side, obviously both internal temperature dependent.

I can't get the pellets to stay lit consistently. I think I've had one smoke where it stayed lit the entire time, which was a short cook (about 3 hours), but other than that I've had the pellets die out after about an hour or so.
