    Dumb question

So I’m smoking a bunch of baby back ribs today and I found something really weird. One of the racks has double rib bones? I promise you it’s not 2 separate racks. It’s one set of full length rib bones with another set of smaller rib bones fused on the top. I tried to split them apart and it...

    Dyna-glo Masterbuilt Frankensmoker?

I’m really starting to like my gravity smoker but I need something larger. The ease of use is right up there with pellet smokers but produces a flavor extremely close to my offsets. I’ve looked into ordering a larger custom built gravity but the wait time is months. So... I see the Dyna-glo...

    Masterbuilt Gravity 560s on Clearance!!

Just found the Masterbuilt 560 Gravity Smokers on clearance for $250 at my local Walmart! I’ve been on the fence about these for a while. Still planning on getting a chargriller 980 but this will allow to test both and do some reviews. Makes me wonder why these are 50% off though. Gravity’s...

Which Gravity Smoker? Chargriller or Masterbuilt?

So my next purchase is going to be a gravity smoker. Masterbuilt 1050 or Chargriller 980? I’ve read other threads on this same topic and watched a ton of YouTube videos but I still can’t decide. Is it true the Masterbuilt doesn’t have a heat diffuser so the entire bottom grate is useless for...

Would you be mad if I served you these ribs?

I’m looking to offer a lower cost option for ribs. Not everybody can afford to spend $20/$30 for a half or whole rack. I plan on offering this as a Meat and 3 lunch special. Seasoned, smoked and lightly sauced. Served with Mac n cheese, beans and probably cornbread for $8 or $9. I’ve cut spare...

Review of Nexgrill 29” Offset Smoker

So after my bad review of the Cuisinart I figured I should switch it up. I was in Home Depot yesterday and saw some smokers on sale. Decided to pick up the Nexgrill 29” smoker for $129. It was the last one and they let me buy the floor model so I didn’t have to put it together. Definitely the...

    Cuisinart Clermont Review

So you might have seen my thread a couple weeks ago https://www.smokingmeatforums.com/threads/smokers-on-sale.309614/ I found Walmart marking down a bunch of smokers and grills and decided to buy the Cuisinart Clermont Pellet Grill & Smoker. Marked down from $700 to $350. I’ve been using it a...

    Has anybody ever used this?!

So as some of you might know I’m always buying and testing new smokers and accessories. I came across this Cajun Express Pressure Smoker that claims to cook ribs in 45 minutes. At $1000+ for the smallest model I’m hesitant to purchase it. I can’t really find any non biased reviews or genuine...

    Smokers on sale!

If you’re looking to try a new smoker check out Walmart ASAP. I noticed yesterday that they were marking down a lot of summer and bbq stuff. Picked up a Cuisinart Clermont Pellet Smoker. It was marked down from $700 to $350. Reviews online seem to be pretty good. I just got rid of 2 smokers...

    Whole hog Caja China

Did a whole hog in the Caja China last weekend. Turned out awesome. I was told that it was the “Best pork I’ve had in my life”. Used an A-Maze-N smoker tube and it work great. Kept smoking the whole cook. Took about 5 hours total.

    Hog hair prep

Doing my first whole hog this weekend. Using a Caja China. Noticed a lot of stubble on it. Is this amount of hair normal? Should I leave it on or try and remove it? Would torching it make it taste like burnt hair?

    Whole hog thaw time?

Anybody have experience with frozen hogs? I’ve got a 70lb pig that’s frozen like a rock. I need it completely thawed by July 2nd, I plan on cooking it the 3rd. Anybody have any idea how long it’s going to take to thaw? I’ve got it in the walk-in freezer. I don’t want to move it to the walk-in...

    Sparerib Saturday

Walmart had spareribs on sale for $1.94lb today. Not the greatest ribs, they’re brined so I skip the salt in my rub. Also grabbed some split breasts and thighs. I’ll throw those on the last hour. Removed the flaps from the ribs and tossed them all in the smoker. Nothing special but I’ll keep...

    Wood with bark?

Recently got a bunch of hickory chunks but has a ton of bark still on the wood. I’ve heard this effects the flavor? Anybody test this/anything to worry about?

    Flamethrower Sous Vide Brisket

Did my first sous vide flamethrower brisket and WOW. Best brisket I’ve ever had in my life. Seriously. Unbelievably tender and juicy. Can’t even explain the texture. It turned the flat into filet mignon. Did some takeout containers for friends.

    Your favorite sides?

So during this pandemic I’ve had to drastically change how my restaurants conduct business. One of them is shut down completely, and the other is temporarily closed while I figure out what to do. I need to change it to an easier online ordering system with minimal choices and faster service. I’m...

    Naked Smoked Pork

Trying a bit of an experiment today. Just threw a pork butt in the smoker completely naked. No sauce, no rub, no seasoning. Ive seen a restaurant on tv that does it this way. Curious how it will turn out. My biggest worry is it getting dry, but I will still wrap it around 4-5 hours. Anybody...
