I didn’t have time to make pizza dough so I used some fresh naan bread. Made a beshamal sauce used fresh figs, caramelized onions, pancetta, Gorgonzola cheese then put on hot grille for about 5 min. When I removed I drizzled with a fig balsamic reduction glaze. It was fantastic.
I usually always brine my chickens and turkeys wether I smoke them or roast them in oven. I’ve been reading Myron Mixons book and he talks about brining his pork ribs and butts. Does anyone else brine there ribs or butts? If so what did you use and what were the results.
Got a 8lb 6 bone rack of beef ribs at the butcher. I cut them into 2 pieces seasoned with meat church’s holy cow and put them on the bull at 225 till they hit 165. I wrapped in butcher paper till they were probe tender about 205. Wrapped in towel and put in cooler for an hour. They were fantastic.
This was my first attempt at corning my own brisket and I was very happy with it maybe just a tad to much pepper but overall very happy with it. I used the americas test kitchen recipe for brining and amazingribs recipe for the rub.
