Okay, the ribs are officially on the smoke. Using a mix of woods. I let them macerate overnight in the rub and salt. Pork butt went on last night at 8 pm. Pretty excited to see how this batch of short ribs comes out. I have never done them before. They are about two inches thick and full...
Hi,
I stumbled across several racks of whole beef short ribs. There’s about five ribs per rack and I’m going to smoke them for a little gathering I’m having tomorrow. I’m still vacillating on whether I’m going to leave them whole or cut them up first. They are about 2 inches high. I have seen...
I'm making country style pork ribs for the first time. I've always smoked double meat baby backs or spare ribs, but my grocery store had a grip of country ribs on sale this weekend. I have them rubbed and waiting.
Question though, since they are boneless, do I put them on a grill pan, or...
Found out last minute that I have friends coming over for dinner. Ran to get two tri tips and have them in the smoker. Going a little hotter than 225 because I'm short on time. Fingers crossed!
I have a brisket on the smoke for supper tonight. (So at least I know we will be eating tonight. )
My question is more around beef ribs. I've done thousands of pounds of spare ribs, baby backs, short ribs, you name it...but I've never done standard beef ribs.
A friend of mine gave me a rack...
I know...I know...I've been AWOL for a while, but I promise I never stopped smoking, only fell off the communication grid.
I recently learned how to stone sharpen my knives and I'm thrilled! Mine are carbon steel so can't be put in an electric sharpener. I use to have to take them in and have...
Vacation was wonderful, but I missed my smokers and everyone here
Had to throw on some ribs when I got home to stop the shakes .
They should tide me over until this weekend when I plan to smoke all weekend to make up for lost time!!!
Went to Famous Dave's BBQ last night. Apparently they have won over 300 awards nationwide.
I had spare ribs and pulled pork, son had brisket.
We went sauceless on all of it since I prefer them dry anyway and they have 5 different sauces to try.
The ribs had a great flavor, and were charred...
Whew!!
We had a pretty good earthquake today. Last reports were 5.8 magnatude centered about 8 or 9 miles from my house!
My son was at summer school and they evacuated the school but all was fine there.
Target and Costco had to close and restock because of things falling from the shelves and...
Here are the finished fatties that didn't make it in time for the final Throwdown. I posted the contents Friday on the throwdown thread but here are the final pics. They're not plated...sorry.
Thanksgiving Dinner Fatty
Lasagna Fatty
Beef Wellington Fatty
I made three fatties for tomorrow's breakfast. One is really simple for my son: eggs and potatoes wrapped in sausage. (He doesn't even want cheese!!)
Then I made one with spinach, herb and garlic cream cheese, 4 cheese blend, sauteed mushrooms, bell pepper, avocado and tomato, wrapped in...
I decided to do a stuffed pork tenderloin roast for dinner tonight, along with a few kielbasa that I will suck and freeze for dad and a couple of fatties for tomorrow's breakfast.
I rubbed the roast last night with EVOO and my rub.
This morning, I stuffed the tenderloin roast with herbed...
SMIED - Smoked then Fried
So the Smoked then battered and fried chicken experiment is off and running. I had brined the chicken and then soaked it Wednesday. Then I coated it in a mix of buttermilk and tobasco overnight. I put it on the smoker about 3:00 today. I pulled it at about 5:30 when it...
The fam likes it fried...I like everything smoked. I want to try something and wondering if anyone has tried it before. Don't see any posts on it.
I have my chicken pieces in the brine to smoke up tonight and here's what I'm thinking. I want smoked chicken, but I want fried chicken...
So...
I had the schedule all planned. Start the Pork butts at 3am, the brisket at 5am, the ribs at noon. That gave me plenty of time for them to sit in the cooler even if they took a little longer then expected. I had several spare hours built into my plan. I made several of the sauces and stuff...
Hi all,
I have a question regarding my son's graduation party.
On the Silver smoker I'm doing all the abt's, mushrooms, kielbasa, etc.
If I was doing it all there, I would know my placement since I've had it much longer
But on the GOSM is where I have the question...
I have 3 pork butts, 3...
Smokin Jack,
I was going to post the thread from Dutch's sticky, but the link doesn't seem to be working anymore.
Anyway, here is the modification link. There are also a lot of stickies here with mods and pics.
Hope this helps,
Well, from the wonderful word of fatty invention, there are two more I need to add to the list. The first 6 kinds I experimented with were all good, some better than others...but I now have to continue on with my fatty foray...
May have to change my tag line to "On a quest for the perfect...
Have two fatties on for dinner, a Philly fatty and a turkey fatty. Also did some bacon wrapped shrimp as an appetizer.
Was going to do mushrooms and ABTs but ran out of time. They'll have to wait until tomorrow.
Philly Fatty:

Carmelized Onions
Provolone Cheese
Sauteed Mushrooms...
