Protect A-MAZE-N Pellet Smoker From Drippings

Clarification: I took out the water pan and moved the wire rack that holds the chip box up in its place, so the AMNPS was less exposed to the flame of the burner. Seems to have worked well. First smoke here - raspberry-glazed St. Louis ribs. Recipe here...

Protect A-MAZE-N Pellet Smoker From Drippings

Saturday morning. Fired up the smoker and the AMNPS. Smoker steady at 220-230. AMNPS smoking cheerfully. One rack inside. AMNPS on bottom shelf. Check fifteen minutes later. No smoke coming out of the damper. Peek inside. AMNPS not doing anything. Long story short: I tried all kinds of...

Protect A-MAZE-N Pellet Smoker From Drippings

I smoked 3 racks a week or so ago for a big family gathering on my 10-year old el cheapo Lowe's Master Forge. At 5-1/2 hours, I checked it and when I opened the door, I heard a metallic clank and the flame went out. Turned out the aluminum venturi, connected to a steel plate on the smoker body...

Protect A-MAZE-N Pellet Smoker From Drippings

Yeah, it caught fire right at the spot where it's closest to the burner. Looks like a trip to Home Depot for a paver. Or maybe I'll just place it on the bottom rack and tent it with foil.

Protect A-MAZE-N Pellet Smoker From Drippings

Thanks. Running a test right now with the AMPS on the floor right next to the burner. Have the fire as low as possible because it's 90 in the shade here today and I can't get the temperature below 250. But the AMZPS has been in there about ten minutes and it's smoking happily; I'm going to give...

Protect A-MAZE-N Pellet Smoker From Drippings

Here are some pictures. I fired it up and got it to 250 degrees before trying to put the AMZNPS in between the chip box and the water dish, to see if the flame would make the smoking chips simply catch fire. Turned out it didn't fit, so I turned off the gas and just let the AMZNPS do its thing...

Protect A-MAZE-N Pellet Smoker From Drippings

Arrived yesterday, assembled, seasoned, and tested. The flame doesn't hit the bottom of the chip pan, but it comes real close. so you may be right. I tried putting the AMZNPS (or whatever the proper acronym is for the maze pellet smoker) on TOP of the chip holder, but it doesn't fit; not enough...

Protect A-MAZE-N Pellet Smoker From Drippings

It's gas. Don't know yet if the AMNPS will fit in the chip pan. Maybe that's the issue. But assuming it does, why not do it?

Protect A-MAZE-N Pellet Smoker From Drippings

Haven't been here in quite a while, so apologies if this is a topic that's been beaten to death. Smoke Hollow 38" is going to be delivered Wednesday* and I ordered stuff to go with it, most prominently the AMPS. I've seen a number of ideas for how to keep the drippings from falling into the...

    Cranberry Brined Turkey Newsletter

Okay, my turkey turned out good - nice cranberry flavor in the skin. But the skin was rubbery and tough, though not as bad as some chicken I've done. I had the smoker going at 250 the whole time. I know the advice is to put it in the oven for a while to crisp up the skin. Questions: 1) Bake or...

    My First Turkey

Looking nice. Regarding how to get two gallons of brine and a turkey into a 2.5 gallon Ziplock bag - see my posts regarding the turkey I smoked today here.

    Cranberry Brined Turkey Newsletter

Started smoking a little after noon; got done about 5:30. This is about an hour into the smoke. About four hours in: And finally, ready to get covered with aluminum foil and rest for a while: Facebook friend of mine commented that it looks dry. That's the rub that makes it look like...

    Cranberry Brined Turkey Newsletter

Mrs. BPSCG and I are having friends over for poker tonight and I decided to try the cranberry brined turkey. It'll go into the smoker around noon today and I'll be able to keep an eye on things while I rake the leaves. One thing I saw in the recipe that folks might want to consider. You said a...

How Do I Get More Tender Chicken Skin?

Thanks, everyone. I do use a rub with lots of sea salt or kosher salt. I'll try the higher temp, see what happens, and report back.

How Do I Get More Tender Chicken Skin?

Recently started smoking chicken in my Lowes Master Forge LP smoker (similar to GOSM) and have gotten great results - tender, juicy, and nicely smoked. Rave reviews from the neighbors. The only problem is the skin, which comes out only a little more tender than beef jerky. Wondering the best way...

    Is It Worth It?

Looks almost identical to the Master Forge Lowes currently sells for $149 new. Difference is that the MF has two doors, so you can keep loading wood chips at the bottom without losing the heat up top.
