I have been given 2.5 lbs of fresh walleye fillets. I've been thinking of dry curing a fillet like do salmon? Is this possible or will I just ruin a good fillet that I should of fried.
I have the 22" Weber kettle grill I see there are 3 sizes of the vortex available. I just want to make sure I order the right size. I would guess medium but I thought I would ask the weber experts here before I order.
I made another batch of canned roast beef and beef stew yesterday. This is the first time I've ever canned beef stew. We will try the stew for supper tonight.
I received a gift of some meat from a new packing plant located just outside Billings MT, called Marbled Meats. I've never cooked Flat Iron steak before. It looks very well marbled. How would you cook it? Is it a tender cut that should be served medium rare? I really like the taste of beef...
Had a prime brisket in the freezer with no plans to for a future smoke, so I decided to can it. I like home canned beef and its great way to have roast beef and taters after work. I just trimmed it up and cut into chunks. put it in Qt jars with a little Johnny Seasoning and processed in the...
Cooked a ribeye tonight on the new Weber Kettle. Over the years I've owned a lot of grills but this is my 1st kettle grill. Looking forward to many cooks on it. The steak tonight had great flavor, just used some "Johnny's Seasoning Salt" served it with corn on the cob and cucumber salad...
Well I finally pulled the trigger the Mrs. said I should get for my 65th birthday. So I ordered a 22" Master Touch. It's supposed to arrive Friday. Now I have to decide what make for the 1st cook.
Made St. Louis style ribs with Boiled Taters & Scalloped Onions. I tried a new seasoning that everyone really enjoyed. I ran the RT on low for a 1/2 hour then bumped it up to 200 for 30 minutes then let it run at 225. After 3 hours I wrapped in butcher paper for 2 hours. Finished them with no...

I didn't see a spot in Equipment for griddles so if the mods need to move this its fine.
I've never owned a Weber Kettle grill and I'm considering getting one. Can anyone explain the difference other than colors between an Original Premium, the Master Touch and the 70th Anniversary Edition. Is mostly cosmetic or do the have different features?
I'm getting a hog from a local grower in April. This farmer raises hogs old school (not confinement) and special feed. I've had his hogs before and they are much richer than store bought pork. My question is I have never cured a ham. I'm think I can make the normal wet cured ham. But I'm...
I've been looking for the Japanese BBQ Sauce for a couple months, ever since I heard about it here. After checking the local stores and Walmarts with no luck. I was doing some grocery shopping at Costco today and spotted a 34oz bottle, I was surprised. Now the question is what do you use it on?
This was my first time making Bangers & Mashed taters with onion gravy. It was also my 1st time making banger sausage. Next batch of sausages I will up the fat content as they were a little dry, onion gravy was fantastic though.
Picked up a rack last night at Wally World and did them on the RT today, for myself and the Mrs.
Out of the package and trimmed up.
Tried something new mixed up some mayo and yellow mustard for a binder.
Slathered it on.
Then sprinkled on a healthy dose of rub.
Let it rest for about an hour...
I haven't done beef ribs very often. I'm planning on putting about 10am. I seasoned them with a free sample I got from PS. I tried it on a ribeye I did the other night and it was pretty darn good. I can taste a little celery in it. Anyway here's some pics I will update as the day goes on.
