I set my pid to match it at around 50 degrees when starting up. But once it reaches around 140 my pid was reading about 230. I had to go in and reprogram it...

    Ribs for tonight

    Last night I rubbed 2 racks down with some mustard and Apple juice. Then I put my rub on them and back into the frig for today. Will be smoking them shortly. Just thought I would share some pics. I like to cut them into 3 or 4 bone sections before smoking.

    Venison/beef snack sticks.

    OK im trying my luck for the first time ever with these snack sticks. I did 5# batches. The first was half deer half beef with 20% added fat.
