Ok... All my thermometers should be here today. This last brisket has been bugging me all week and I think another one is going in tonight! I'm doing to document it really well this time! I'll lick this brisket yet! Oooh, maybe it will be ready in the morning and I can have some brisket & eggs!
Still thinking about my poor brisket from that other post. What kind of thermometers are you all using? I was originally using a wireless digital one with a probe to measure the air temp in the grill. Are they accurate if you leave them on the rack? I feel like I get odd readings from it...
I did a brisket this weekend. Very disappointed. The first one I did was wonderful. I modified my char-griller by putting in the baffle and dryer hose to help with temperature. it was a little thicker than the first one, but I smoked it to about 190 degrees in 7-8 hours.

Well I had a bunch of things I wanted to try after I got my smoker going and I was down to sausage & beef ribs this week. Sausage was so so, but I just used some store bought ones, I think if I made my own it would be better. I threw some chicken legs... just because there was space.
