Alarm just went off to wrap the ribs. I am about 1/2 beers in to my lounge chair in the shade after 2 1/2 days of yard work. Maverick says temp is holding on the pg500 so the ribs are just going to have to fend for their self for 2-3 more hours. I'm guessing the will still come out good

I was in Cabela's the other day and they had a bag with their lable of roasted garlic and beer flavored pellets. My inital thought was no way they are any good, but the more I think about them the more I want them to be good :)

Well after spending a week looking around here for a packer brisket, and only being able to find 4 lb flats, I finally found a place that had full briskets. Only problem is the smallest one they had was 18.5 lbs and has very little of a fat cap.
So does everyone think this will smoke up ok...
I smoked a couple of chickens yesterday, and want to freeze some of the leftovers. While Beef and Pork usually turn out ok, every time I vacuum pack chicken or turkey, when it defrosts it is always stringy and dry, no matter how good it was when it went in.
