I had to cut my brisket in half to fit in my vertical smoker. Now the flat part has reached 165 and I've wrapped it in aluminum foil and is at almost 190. The other half is only at 60. Is that normal????
It's not a fatty, and I don't know how it will be. Time will tell. It's a ground Turkey roll stuffed with Pepperoni, dried tomatoes and mozzarella cheese. This is what it looked like Before I put it on this morning.
Got the Brisket on the smoker at 7:00am this morning. I know its not a fatty but I'm trying a turkey roll to go on there too. We stuffed it with pepperoni, dried tomatoes and Mozzarella Cheese. here's the pics so far.

I plan on doing my first brisket in the smoker in the morning. The problem is, The brisket is to big to fit in my King Kooker smoker. Is it a problem to cut it in half? Does it matter which piece should go higher in the smoker?
