Well, kind of anyway....while cleaning my WSM I discovered a hole in the water pan, rendering it useless. In the past I used a brinkmann charcoal pan but they have since gone out of business....should I go online and pay the $30 for the one I found or is there another hack that I don't know...

has anyone ever made sense of the strings on the top of the charcoal bags? is there a method to the madness? sometimes i pull one end and it all comes out easy and sometimes its in a knot and i have to try the other end and so on...... it kind of makes me crazy every time !

well, thanks to all your help the first smoke on my certified preowned WSM went smoothly... i cant believe the heat control on this thing. it was a dream to use .. i almost felt dirty for not doing as much to maintain the temp. any way here is the pics of the brisket, dutchs beans and the smoked...
well, mrs goobi found a recipe for me to try.. figured if it goes on the smoker, cant be that bad.
fairly simple
slice open dates and stuff with cream cheese
wrap in bacon (or turkey bacon as the case may be)
smoke for 1.5 - 2hrs with your favorite wood (these were on for 4 hrs TOO LONG)...
this is my 1st smoke with this baby and it seems to be a step up from my ecb.....do i leave the top vent wide open and control heat with the bottom vents?

im looking for a good place to get wood or lump charcoal in either south fla (ft lauderdale) ,orlando or tampa area.going upstate to see the mouse and such and i figured an unplanned unauthorized stop would be alright. any help would be greatly appreciated by my neighbors who only come out...
