what temp to take ham to

Just got a nice ham for Easter, and going to throw it on the brand new UDS. What temp should I take it to? The thing I like about a bone in ham is how it gets nice and tender and falls apart (more like pulled pork). I've seen 140 thrown around, but I'm sure it wouldn't be fall apart tender at...

1st big smoke on the GOSM

My 30th birthday is coming up on Saturday, so I'm firing up the GOSM for the first big run. Got a big pork butt, some sausage (for a fatty), two huge chunks of salmon, and a brisket. I didn't think I'd try a brisket this time around, but then I looked at the store. Instead of all the other...

    Anybody like pecan wood?

Was at Ace Hardware with the wife who was buying plants or something. Happened to need wood chunks and they had some on sale. Just used up the last of my apple chips, so I thought I'd try something new. Choice was either mesquite or pecan. I chose the pecan. Has anybody used it a lot? What...

First test run of the GOSM

My 30th birthday is coming up weekend after next, and my wife has invited 15 people already to come over to the house (supposed to have been a surprise). Plan is (so says the wife) to smoke meat for everyone with my new GOSM. So I had better get started practicing! Didn't have much time, so...

    Anybody ever smoke wings?

Had smoked wings from a barbecue restaurant here locally, and they were fantastic. Just curious if anyone has any experience smoking wings, and if so how long they take. They aren't very think, so I can't imagine they'd take that long.

Starting to season my new GOSM

Question. I hear a lot about "thin blue smoke" being what you want rather than white smoke. It's hard to tell what I have. Any help? I'm using apple chips since that's all I had on hand. Is it harder to get that blue smoke with chips rather than chunks? Here's a couple of pics...

What's the most you've ever fit inside your Big Block

The wife caved in and let me get a Big Block. My question is, what is the capacity? I can see that it has "x" amount of cubic inches, but how many pork butts can I comfortably cook if I had to? I know it's extra wide, but how many slabs of spare ribs can I cram in there? Lots of adjustable...

Mechanism to switch betwen 2 propane tanks?

I seem to remember a post on here with a link to a "switch valve" (or whatever it's called) that lets you automatically rollover between one propane tank to another. $38 rings a bell. Is this right, or am I thinking of something else?

where to find smoke hollow electric?

Does anybody know places where I could find a Smoke Hollow electric smoker? I like the vault design, but want an electric. I found one online at rural king, but I don't want to pay $50 for shipping. Any ideas?

Pimento wood for Jamaican jerk chicken?

Has anybody ever used pimento wood for Jamaican jerk chicken? I've only been able to find one source of it in the US (through somewhere in Minnesota), but would like to give it a try soon.

    New from Kansas

Hello. I'm getting a smoker for my 30th birthday, and I get to pick it out. Looking at something propane or electric probably. Good to see such a good resource available. Looking forward to getting to know some people on here.

    GOSM Modification

Hello. I just joined. I'm getting a smoker for my 30th birthday, and I get to choose it. Somewhere $150 or under. I will probably mainly use it for pulled pork. I like the idea of being able to use an electric overnight, so am leaning towards electric. Wouldn't necessarily feel as safe...
