    Grill calogen casing?

Made 15lbs of chicken Italian sausage thinking I had hog casing. I didn't but had a package of calogen so I used that instead. Will there be any issue simmering in beer then grilling them? I have smoked them but never direct grilled them.

    Question about Mortons tender quick.

Ok so I found MTQ. I read on the bag that I need to use 1tbs per lbs of meat. But I thread about Nespas pepperoni, everyone seemed to agree that you use 1.5tsp per lbs. That is half of what Morton say to use. I'd that because the directions on the bag are talking about rubbing on the surface...

Brook Street BBQ, Houston, TX, Sausage?

So I was in Houston for work for a week. Tried several BBQ joints. I liked BrookStreet the best. I really liked the sausages from each of the places I tried though. Bonus from my pulled pork...

So a few weeks ago I did up 20+ lbs of pulled pork to begin stocking up for the winter. Part of my process is an injection marinade with quite a bit of butter in it. a friend came across a guy cutting down a crab apple and a cherry tree. Knowing that I have gotten into smoking, he asked if he could have the wood. The guy gladly gave it away to get it out of his way. So now I have 6 18" logs about 10" across of cherry and the same in crab apple. I have a...

Do you keep your smoker covered when not in use?

I have a Chargriller Pro w/SFB. I bought the cover for it. Only $20. I have had the cover for about 3 months. It's already sun faded, then today, I took it off and it ripped like paper. There was no strength left in it. Before I go waste money on another cover, I am wondering if it really is...
