I was out of brisket rub and have 2 cases to cook next week so instead of taking a nap, I choose to mix up my brisket rub. I also have to carry some of this to some friends next weekend. My recipe makes 12 lbs and here are the pics.
I am building a walk in cooler to store deer in. The small town where I am working has no deer storage available. I may also make another to place in the neighboring town, as they have no such facilities either. I will try to keep this updated with the stages of construction. I am planning...
I cooked up some spares today. They were not the meatiest I have ever seen and even had a couple of shiners, but they were good. First pic is ribs with membrane removed, moistened with worchestershire, seasoned, and placed on the smoker. Next is ribs ready to be foiled. Then ribs out of the...
I have been cooking briskets and beans for a birthday party for a 90 year old lady that lives in the community. I started last night by seasoning and putting 2 cases of briskets (12) into my Southern Pride smoker. I put them on at 7:00 PM last night @ 200*. I checked temps at 10:AM and they...
I got a pm from Rich, wondering where I have been. After watching the following and giving it great thought, I have decided to sell ALL my bbq equipment. It is stated that that is award winning Q and I must have been doing it all wrong. Time for a change...
I am doing a little cook for a friend's daughter who graduated Friday. 3 goats, 2 pork butts, 1 brisket, and a couple of slabs of pork ribs for me. Pictures will follow later.
My day started early (4:30) yesterday morning. I cooked 2 cases of brisket, 3 goats, and 20 pounds of pinto beans. A large time was had by all and the band finally quit playing at 2 AM. I was in dire need of sleep. First picture is the BBQ pits. The one on the left was full of goat and the...
I smoked some spares while my son was here from South Carolina last weekend. Plate was complete with ribs, beans, potato salad, and homemade sourdough bread.
I made this a couple of weekends ago when the neighbors came out. It did not last long.

Here is the sourdough starter recipe that I use. It came from Richard Bolt. I never had the opportunity to eat at his wagon, but I know some who did. I do have a copy of his cookbook, "Forty Years Behind the Lid". Richard Bolt was a genuine chuckwagon cook.

This morning was the coming out party for my sourdough starter. I made sourdough biscuits and ate them along with some homemade wild plum jelly, homemade sausage, and honey from hives at the ranch. It was good.

My neighbors are harvesting their pecans, so I made a cobbler last night to help feed the crew. It is an apricot/pineapple with chopped pecans in the batter. I will post the simple recipe in the recipe section.
After grinding and mixing the meat and seasoning it was placed in the refrigerator for 2 days. Yesterday we stuffed and smoked it. I separated the meat into two parts and made jalapeño/cheddar and the other jalapeño/Monterey Jack. After smoking it was quickly cooled in a cooler of cold...
Yesterday I made 80 lbs of dried venison sausage. It is hung in the smokehouse for 24 hours of smoke and then will remain there until dry. Pics are sausage hanging, beginning the smoke, and this morning after 12 hours of smoke.
Pulled membrane off back, seasoned, put in smoker, at 4 1/2 hrs. basted with wild plum jelly, jalapeño juice, and Sweet Baby Ray's mix., smoked 30 more minutes and ring the dinner bell.
I have a pot of chili simmering and it is not OUTSIDE in the COLD, and it does not have beans in it. I think from the samples that I have already had, that it will be good anyway.
