    I will be smoking a 12-13# turkey on my 14.5 WSM. I usually smoke everything at 225 degrees what is the ideal temp to smoke a turkey at? 250, 275 and long would it take? Should I use water or broth in the water pan?

    I will be smoking a 12# bird on my 14.5" Weber Smokey Mountain. My question is it better to smoke it on the upper or lower grate? If I do the upper grate the bird will be very close with the dom of lid, were talking about 1" or so.

    Has anyone smoked a turkey covered with cheesecloth? I am curious to hear feedback from someone that has smoked one with and one without cheesecloth. I know cheesecloth helps keep lighter color but does it have any other effect?
