Had a competition last week with my new pit got 3rd in chicken I wasn’t happy with it so I changed up a few things with pit and fire and different rub I am happy now !
Been a long process I first built it as a rf didn’t like it cut it all apart rebuilt it I have smoked 100# of Butt’s 60# of loins and 5 brisket and 200# of chicken and ribs and love how it smokes finished trailer this week! Have a competition Sunday can’t wait !
Ok it started out a reverse flow a last minute firebox change messed it up worked of but couldn’t get enough heat in cc so I cut the thing apart and rebuild it in 2 long days but it was worth it I couldn’t be more happy even heat on top side to side bottom is even heat !
Ok I built a rf cc is 30”x5’ fb is 24”x20x30” I have a 6” stack 36” tall below rf plate is 7”x14 I have a 2” upper vent and a lower 3x5 vent in fire box it will told 225 for hours but I have. Dirty white smoke can take smoker to 300 still white smoke I leave vents all open and door cracked still...
well it’s 12:30 got all 3 butts pulled took them off smoker at 10:45 rest a hour! I ended up with 15.5 # of pork and 10# of pulled chicken for the fire department Appreciation dinner Sunday!
Did 50#s last Monday buddy said he needs 40#s more so did them today and some ribs for use I don’t mine the practice competition starts soon but I think I have butts down get same out come every time !
