Dang, briskets are hard for me!

I've smoked pork shoulders, chickens, ribs, and turkeys with great success. But I'm still trying to master brisket. Folks tell me that the taste is great, but I'm baffled why parts of it are actually falling apart, hard to cut (too tender?). So, a few things: - so far, I haven't trimmed the...

    Birthday ideas?

My wife is asking me what I'd like for my birthday, and I'm hard pressed to think of anything.  I have the 40" MES, the external MES "cold smoker" unit, and a 22" Weber with a Slow and Sear (I use it for wings, steaks, and sometimes if smoking multiple meats).  I guess I could look at a grill...

    Merry Christmas!

I hope you all have a wonderful day and eat exceptionally well!  And may 2017 bring you all lots of meat and other foods to smoke and grill, and maybe we'll even try new recipes!  Have a great day!

    Masterbuilt "Cold Smoker" unit

I've had this unit several months, but I'm still unsure about it.  It pours out thick white smoke, filling my smoker with smoke.  Now, one guy had recommended to uncover the cold smoker and let it dump smoke out until it settled down, and I've been doing that, but that kind of defeats the whole...

    bought a new Thermoworks toy

I bought my Thermoworks Chef Alarm before finding this forum, so I've never tried the Maverick thermometers.  However, I've long wished that my Chef Alarm had a remote monitor and more than one port.  Well, lo and behold, Thermoworks just announced the Smoke model, and I checked with my boss...

    Homemade Montreal Steak Seasoning

I smoked our steaks last night, and was looking around for advice and found this seasoning recipe.  I cooked an extra steak with this, in case we didn't like it.  The concensus was, we loved this seasoning! http://dontwastethecrumbs.com/2015/05/homemade-montreal-steak-seasoning/

    heh, I started a fire!

Ok, I still haven't bought the AMZN yet, so maybe that should be my next purchase.  Meanwhile, I'm still using the chip loader. Ok, I thought, "hey, it does well when I fill the loader almost to the top, but I fill it OVER the top, it'll smoker longer!" Good thing I have a window on my MES...

    Belated Merry Christmas!!

Lots of family together yesterday, and the day flew by.  I did smoke a ham, and my wife baked pecan and pumpkin pies.  It was a nice day. I hope you all had a wonderful day, and will have a great weekend!

    My First Thanksgiving Smoke

This was my first attempt at smoking turkey, and I'm pleased and surprised to say that it was an overwhelming success!  I'm thankful to the people over on my first post ("noob trying to grasp all this") and to Kenji at The Food Lab / SeriousEats.  Our family and extended family generally don't...

shoot, I hope this won't be a disaster

[UPDATE - see bottom] Dang.  I bought the MES 40 at Academy a few weeks back, and I noticed the temperature was 50 degrees (!) off, but then I experimented with deflectors and tried to get the temperatures to stabilize and thought I had. So today, I'm having the same problem - as a result, I'm...

    preheating MES 40

In preparing for tomorrow's big first-ever smoke for extended family, I've been dabbling with my new MES 40, and I found Bear's suggestion on managing the temperatures to work great.  If I want 250, set it at 220 or so and watch it as it passes through 220.  Eventually, I set my temperature to...

    deflector in MES 40?

Hey, I'm experimenting with different deflector configurations, using aluminum foil, and I've had it flush against the back and flush against the right wall, but I saw on another thread here to not flush up against the right side.  I've read that Bear has a good deflector, could someone send me...

noob trying to grasp all this!

Hi, this year was my first venture in to smoking.  My son and one of his best friends earned their Eagle Scout ranks, and a friend suggested I smoke a brisket for the celebration.  I knew nothing about it, and bought a $50 charcoal unit from walmart, read up on directions, and had a tremendous...
