    Bacon not firming up?

I've attempted my first batch of bacon. Three tablespoons of tenderquick dry rubbed into three pounds of bacon, just like it says on the package. I put it in an oven bag, because I could not find the two gallon size bags recommended in the ruhlman book. I've been flipping it each day for six...

    REALLY?

Will one tablespoon of "tender quick" per pound actually cure my pork belly? I've never done this before, and I've read around, but still, it just doesn't seem like it would be enough...so little rub for such a large surface area. Am I just being silly? I imagined you had to really coat the...

I am considering building a UDS in the future, but I am curious about something. Which is a better barrel? Food Grade Lined, or a Gas/Oil Unlined? I see alot of folks are getting a food grade barrel that has a liner, which is then burned out. Alternatively, folks getting an unlined barrel seem...

    Central Oregon Greetings

Greeting Everybody. I've been lurking for a number of weeks, gleaning what I can before I did my first slow BBQ the other day. I live in the country in central Oregon, on a high plain on a hay farm. My interest in BBQ and smoking is new, and came about because we moved into a cabin with no...

Howdy everybody. I'm new to the bbq game, and have a question about making charcoal. See, I have a ton of juniper wood laying around in brush piles. So, I had a fire, and collected the charcoal as it burned, stuffed it into hole in a ground, then snuffed it out by depriving it of  oxygen by...
