So I have been using my Char Griller for about five years. I was wondering what would be the next step up? I usually cook Chicken and Pork. I really haven't tried brisket or any beef. The Char Griller has been excellent, but I was wondering what I should be looking at next?

Just wondering after the temp starts dropping in my char griller, do I add lit (white coals) or fresh charcoal? How much do people add to refuel?

Novice smoker here. I have a Char Griller with a few mods. Still need to seal the hood. I use mostly oak chunks for and Kingsford charcoal. I use a basic sauce for both mop and eating. I have learned a lot here so far, hoping to learn a lot more.
