    MES 40 Not Heating...

I have already redone the connections at the heating element once about 2 years ago. Now, once again, the panel on the smoker shows it is always heating, but the temp stays below 90. The remote will show it "heating" for about 15 seconds then "heating" goes off. I have not had a chance to open...

    Last minute baby backs!

I decided at the last minute that I should smoke some baby backs for this evening. I pulled them from the freezer and thawed quickly in some water. I am throwing some baby backs on the smoker along with some chicken breasts and gonna smoke at around 250 with apple wood. For the corn, I plan to soak in water a few hours, then wrap in foil. How long can I plan on these needing to be in the smoker. For the asparagus, we plan to wrap in ham...

    Best IT for baby backs?

I am smoking some baby backs today. Since I normally use regular pork ribs or St. Louis style, I have always overcooked my baby backs to the point to where I can not even remove them from the grill or smoker without them falling apart. I read on here somewhere about cooking ribs by temp rather...

    How do you prevent rust?

I have a Chargriller Smokin Pro that is more than several years old. Every year, I have to take it apart, sand it down inside and out and repaint using High temp rustoleum. I just reordered a new charcoal pan, grates, etc to rebuild this grill. My spring repaints of this grill have gotten old...

First brisket in a VERY long time!

Reason for the delay in cooking another is that my first two many years ago went straight to the trash after trying to eat it. Total failures! I think I am ready to attempt this again. I have an 8 lb brisket I plan to cook tomorrow on my MES 40 with some mesquite smoke. I am currently reading...

    First time butt smoke!

I picked up a 4.25 lb butt roast today and plan to smoke it on my MES40 tomorrow. I have it rubbed down with some Cinammon apple jelly and a dry rub I found at the grocery store. Everything I have read here talks about using them for pulled pork. If it is pulled from the smoker at a lesser...

Can't get the hang of this built in temp probe...

MES 40 smoker. Everytime I use the temp probe, it says the internal temp is what should be done, but after pulling the meat and cutting into it, it is obviously not done. Today, I cooked a pork loin at 230 degrees. I put it on at 1215, pulled it at 415 when showing 149 degrees, wrapped it in...

    Small Pretrimmed brisket...First time!

I bought a new electric smoker on Black Friday and decided to attempt to try a brisket. I started small due to price and bought a small pretrimmed 3lb brisket. I would hate to waste big money ruining my first brisket! I seasoned it up last night and plan to cover it with bacon for a little...

What happened to the "original" char-griller mod thread?

I could have sworn I remember reading through one when I first found the site. It showed the different mods, how to do them & why to do them. I cannot find it now!

    Small brisket...never done this before!

My wife picked up a small trimmed brisket the other day. It is the smallest cutest brisket I have ever seen, weighing in at just over 2lbs. I have only tried a brisket once & ruined it, so I would love a little help with this one. I plan to smoke it at about 200-225 degrees...any idea how long...

    Cover for my Chargriller!

Anyone know where to get a good, THICK cover for my Char-griller with side fire box? I have gone through several that we get from Home Depot or Lowes, but they are thin & rip after a couple of months of taking off & putting back on. I know someone sells one...I was on a chimney fire call one...

    Bitter tasting peppers?

The only time I tried doing anything with fresh jalapeno peppers, the peppers were REALLY bitter! Did I just get some bad peppers or what? I normally eat them on everything (canned or jarred ones from the store) & love them & have never experienced that bitter taste! Any idea what happened? I...
