    Lonzino done (UMAi)

After a 30 day cure in a vac bag, I put this pork loin into the UMAi bag, sealed it up, and then put it in the frig.  I left it alone for 45 days, other than an occasional squeeze to test firmness, and then on day 46, I weighed it.  37.8% weight loss. When I opened the bag up, the smell told...

    Brined/cured smoked yard birds

I put these 2 birds into 1-gallon each of Pop's pickle 6 days prior to smoking.  I normally don't show most of my birds, but since the ones from last week came out very interesting to look at, and tasted pretty darn good as well, I figured I'd recreate with pics.  Most of the time the birds come...

    Smoke therapy required

It was a heckuva 2 weeks, sorry I've been slacking on here. :31: The heat index outside right now is 106, so I'll wait until about 7 tonight to start my therapy session. 1 big packer brisket, 2 large butts, and 2 chickens. The birds will be in the brine/cure for a week, but the other meats...

Just a butt for the boys in the Maintenance Dept...

We needed to work some serious OT this last week and I told the Maintenance guys I'd make some PP for them for lunch on Friday if they pulled off everything I needed done along with their other chores.  They not only got everything done, but performed a few other items that I had slated for next...

    Freezer clean out breakfast

Last night, my bride decided she wanted to reorganize the kitchen freezer. That always makes me nervous, so I supervised her efforts. This morning she decided to make breakfast from some of her finds while I prepped meat and sauce for mom's birthday party. She didn't disappoint! Eggs from...

Mom turns 72 tomorrow, wants brisket and ribs, time to be a good son!

Like the title says, mom will hit 72 tomorrow and I asked her what she wanted for her birthday. "Brisket, ribs, and your homemade BBQ sauce"! So, being a good son, I went shopping. Big packer and 4 racks of ribs will be smoked. But before I fire up the smoker, I needed to fuel up! Farm...

My bride bought me a couple of spooky cutting boards!

For several seasons we watched Bates Motel on cable. It was a cool show and when it ended I figured it was all over. Well, we returned from vacation and had 2 boxes that had been delivered. My bride bid on, and won, the 2 cutting boards that one of the main characters, Norma, used on the...

Folks in New Mexico are serious about their chilie!

This sign is the first thing you see when you walk into Tomasita's in Santa Fe! Yes, I had the red chilie on my stacked enchiladas, and it was awesome! Then, in the lobby of the hotel, you had 2 choices for lemonade; with or without jalapeños! That was some good stuff! The bride and I...

    Baby backs for my bride

I have to admit, my bride is very low maintenance. We are leaving on a road trip tomorrow to go watch #2 son graduate in New Mexico, so I asked her last night wat she wanted to do today for Mother's Day dinner. I named off a few of her favorite restaurants and she said; "ribs, I want some...

In my defense, I was left unattended, so not my fault!

Really, I couldn't help myself! The pulled pork was calling to me, and the pickled quail eggs looked lonely! I'm certain the Tillamook pepper jack cheese would go bad if I didn't eat it! Also, it's hard work watching the smoker, from my recliner! That's my story, and I'm sticking to it...

I sure love this place and most of the folks on it. Looks like I spend a little of my day here on a regular basis. No wonder I have carpel tunnel issues! :yahoo:

    Fancy pants sausage ties

I ran out of butcher's twine, so my bride decided to cut up some of my SS netting so I wouldn't have to go to the store. Oh, the sticks are in the smoker. One is a decently spiced style and the other is taco style, sans the tortillas. 15 pounds total.

Smoked a couple of butts to take to the farm

Little sister and I are putting a roof on my dad's house, and since we THOUGHT we had help coming today, I put a couple of butts into the big vertical yesterday afternoon. I put the hybrid smoker to good use yesterday afternoon and last night. I put the butts on at 4 pm with the basket...

    Road weary chicken

This weeks travels had me only in Texas, so I drove to the 3 plants I had to visit. I don't mind driving most of the time, but the traffic this trip sucked! Knowing I'd be home today, I stuck a couple of chickens into buckets to cure last Thursday night. Got home this afternoon, kissed...

It's now evident that I'm traveling too much

Just now May and I've already hit gold status with the hotel group I stay with on a regular basis. They up graded me tonight and apologized for 2 queens instead of a king. I told them no biggie and then came up the elevator to this! This is a pano shot of the room, but it's huge! Not bad...

How I came up with the "Cranky Blend" pellet mix

For the last several smokes I've been using my own blend of pellets and the flavor has really been good. This was discovered by some serious trial and error spanning over several months of intensive field testing! Ok, I screwed up, but the results are good. A couple know this story, and I'll...

    Chipotle time

2 pounds going into the smoke for 24-36 hours, depends on when the rains come my way. Nothing but smoke for the first 8 hours and then 150 until completion or it rains. Dehydrator is the last resort. Using my Cranky blend of pellets for this one.

Any members around Carlsbad or Artesia, NM?

Will be in Artesia and Carlsbad in mid May. Wanting to catch a fish and needing suggestions about where to go and tackle.

Why did I take this picture?

The grain of the meat on this brisket is pretty steep. So by taking a pic of it before I smoke it I'll know where to start slicing once it's done. Some will eye roll, but many of us have assumed wrong with the first slice or 3 in the past.

What's on the menu for the long weekend and Holiday?

On Saturday I have to smoke 2 chickens that have been curing all week, and also smoke a 14-16 pound brisket.  While that's going on, I think I may spin some ribs on the rotisserie. What's everyone else doing?
