    I usually use half a bag of coals then wood from then on out, i dont half a specific length of wood. Its usually whtever size i can fit in the firebox. Hope this help a little and happy smoking

    why did my brisket cook so quick

    Cook it till internal temp is 200f and then see how firm it is. Never go by time when cooking brisket or any meat. Go by internal temp.
