I got a roll of wire from hardware store ,cut in about 2in pieces and made my own s hooks worked out great, the wire was probably 14 or 12 gauge steel wire
final temp was around 160 @ 225, next next time i will shoot for around 150 @ 225, the dales seasoning is strong so just a few hours to marinade.
I just let them hang until cooled,some of it didnt make that long

freeze first vacuum later,I put soups in tupeware then freeze over night, put the tuperware upside down under warm running water it will fall out into your hand, then vacuum seal
