If the rust is inside the cabinet where you will be cooking then bead blast and season with spray Pam. If the rust is outside bead blast and prime with inorganic Zinc primer then top coat.
You could build a regular cooker with tuning plates and add a second exhaust so you could lock your plates together and create a reverse flow.
My big cooker Bahama Mama is built that way.
I would increase the opening to 16" wide x 8" tall. This will allow for a 1.5" to 2" grease bridge between the firebox and the bottom of the cooking chamber.
On a 30" diameter tank I would make my top door cut 6.5" below 12:00 and the bottom door cut 1" below 3:00.

My concern with scale on steel has nothing to do with food safety as it is just a by product of hot rolled steel. The reason I blast is because that is the proper procedure for painting hot rolled steel. I never blast the inside of the firebox I will have the painter sweep any rust in the...
I simply asked a question based on other posts on the use of the upper intake as I have read it is used to cool a firebox. This cooker is lacking heat hence my question on why would it help. My question was viewed as an attack it was not in any form an attack on Dave. In his post without any...

The first thing I...
Some unknowns are what is the opening from the firebox to the cook chamber?
What is the opening at the opposite end of the cook chamber where the heat/smoke makes its turn?
What is the distance between the lower grate and your reverse flow plate?
What is the thickness of the reverse flow...
I stick weld so mill scale is not really an issue for me while building but once finished I do blast the cooker to clean all the mill scale off before painting.
