    They can be prepared a few days in advance and refrigerated or prepared weeks in advance and froze. Just make sure they are wrapped well or vac sealed.

    I also think it is much too thick. Just cook it low and slow. It will be great.

    I think you will be better to take the temp to 190*/195* and I would cook it all at one setting.
