I always use a Pam type grilling spray on my racks before going into the smoker. Helps with the "jibbles" of meats left on there for clean up time.

That looks wonderful....was thinking about making an apple pie today.
The Recipe that I use (when I don't use the store bought Pillsbury one)...is Ree Drummond's no fail pie dough. She is the Pioneer Woman on the 'net and Food Network.

I am on BP and cholesterol meds too. My Cholesterol is hereditary....dang it. But I make sure that I do a meat and veggie diet each day...Summer time helps with fresh stuff....and with meds mine has dropped big time.

Here is an USDA link from here on the forums. Are you wanting to just smoke it for slicing...pulling....or what do you want to end up with besides something totally yummy?

Those are sooo cute and the other little pumpkin too.
What I do is turn on the oven to about 250*-275.....(350* is too hot...trust me...burned some)
You can use a little melted butter or oil (to coat)
salt (I used Lawrey's)
garlic or onion powder
any other seasoning you want.
Let them cook...
