How To Clean Maverick Thermo Lines

When cleaning the probe, hold the probe with your free hand. If you hold it by the wire, you will likely pull the wire out of the probe. Mavericks seem to be the best available, but none the less, they resemble cheaply built Chinese stuff. Treat the probes with kidd gloves.

    Charcoal and smoke advice

I was thinking electric also. I think one would fit down the side of my chimney. I tried those parafin lump starters. No smoke, and they do work, but it takes forever to get the coals hot enough. I keep forgetting to try lighting them with my afterburner. That should work well. I don't like...

    aquired a gourmet ecb today

A few very easy mods specific to the Gourmet: http://brinkmansmokermods.com/default.aspx The thermos are very inaccurate. If you use it before you get a decent thermo, shoot for just below the "I" in "ideal."

    Looking for some pecan

    >IF< Amazon sells would chunks directly you can most likely get free shipping if you order more than 25 bucks worth of stuff. But if it's sold through their "marketplace" (meaning sellers other than Amazon) you'd have to pay shipping. I love Amazon.

How is a hamburger meat fatty?

The question for the ages then is, wasn't a fatty made from ground beef, really a "meatloaf?" Not that I care. I like to roll up ground beef, and drop it in my mesh meatloaf pan, and smoke it for meatsauce for spaghetti. The smoke flavor really gets into the sauce wonderfully if you let it...

    Great Guy-Movies with Food Scenes

I always liked the buffet scene in National Lampoons Vegas vaction. On the buffet line cousing Eddie says to the buffet server: "I'll have some of the yella, and don't get cheap with me now....."

memphis ribs are grilled over high heat?

Why in MY day, we didn't have all this fancy meat! There was only one kind of meat..... RANCID!!! And if you didn't like it, you ate it anyway! The only way to smoke meat was to burn your kitchen down, if you even had a kitchen! We ate Rancid meat in the burned out remains of our kitchens...

    Iowa State Fair's Newest Addition

I was thinking about partially cooking some bacon slices, each cooked in the shape of a circle. I would roll up some more bacon, and stuff the circles with them. Then I would wrap the whole thing like an ABT and smoke it. I'd call it "BigSTEVES Genuine Bacon-wrapped, stuffed Bacon." If I put it...

memphis ribs are grilled over high heat?

It only has to be tasty around casa bigsteve. We don't give a rats' patootie about genuine. I'll bet some old time Q was pretty nasty before we invented reasonably controllable cookers, charcoal, and were able to buy good meat fresh at the store. Not to mention such a wide variety of rubs and...

Who does the cooking at your house?

Currently, I do ALL the cooking. Wife used to make something nice on Sundays, but since I started smoking, I make something on Sundays too. We both work, and I hate cleaning, so I cook. My dad was a Chef, and even though he never showed me anything by way of cooking (he hated it, long story) it...

Well, why not? Once a year at the fair isn't going to kill anyone. Although it doesn't sound too good to me, especially at 3 bucks a whack. Best part of the fair is the food. I've been meaning to try deep fried twinkies, but haven't gotten around to it. They're probably passe' now that...
