After a couple years, I have mostly given up on using the charcoal basket. It's a great idea in theory. But I don't do too many overnight smokes and end up just tossing logs of maple or cherry or oak or whatever in after the fire gets going, so it has become redundant. That said, I definitely...
Can't believe this thread remains on page one! It's been awhile since I posted.... been brewing every two weeks on average, so much so that I had to change to bulk ingredient purchases :) And when that happens, I see it's easy to settle into one recipe for awhile. My last many batches have all...
Last batch didn't work out too well. They were delicious, but I had to hurry because we had company and were on our way to a concert. Suffice to say that one of the pizzas leaked onto the stone, which broke when I tried to scrape the muck off. That muck prevented every subsequent pizza from...

I...
The rotisserie is an add-on. And yeah, those birds are awesome. Somewhere between grilled and smoked; the smoke is not quite as intense because it's on at @ 325 instead of 225. But the skin comes out better on the roti.
Glad to provide 'em, and thanks for the props!
The whole thing breaks down in seconds, and stores nicely on the undershelf. Each side wall is two shaped bricks contained in steel, and the expanded steel comes off the pan - so that pan can be used for other purposes if needed. Cost of materials...
Two smokers going simultaneously. Steve Raichlen ain't got nothing on me! lol
Ribs smoking along:
Two birds on the Weber kettle rotisserie, maple log on left side:
