Heads up!
Many Fridge/Freezer shelfs or "Racks" are coated with cadmium.
Cadmium gives off a poison when heated and will kill you.
Google "Cadmium Poisining" to be sure.

but wouldn't you also allow oxygen in to the coals which would cause a temp spike and neutralize some of the heat lose?
