    I go 200 to 205 for pulled pork and I let it rest for an hour. I think for sliced it's 170 to 175.

    To be honest I cannot remember, but there were 18 slabs in the case and I'm guessing maybe between 50 and 60 pounds. The pork butts, it was 2 per package and there were five packages it was between 70 and 80 pounds.

    Sorry I did not clarify that, be $0.50 to 1.50 cheaper per pound is at Sams. The last time I bought a case of ribs at Sam's it was 2.48 per pound versus the cooler price of 3.99 a pound

    No, at best you could cook on a cast iron skillet on the fire box, but the Yoder smokers have an optional cooking grate for the fire box. The Lang only opens from the side and the Yoder opens top and side.

    Brisket fat up or down?

    I too put it fat side down to protect the meat. Low and slow (between 230 and 260), I've never had a dry brisket. That said, 99% of the brisket I cook are from a local meatlocker and top quality.
