    Brisket Rub

I used Montreal Steak for my last two. The first one I used the seasoning right out of the jar. The second time I ground the seasoning in a confer grinder. I preferred the later.

    Morton Kosher salt

How about using sea salt? Isn’t that just as good? I see you got at Costco all the time.

Longhandle Custom BBQ Pits- who’s has heard?

I just came up with some sort of Newsletter from Google that showed an add for Longhandle Custom BBQ’s. The newsletter was from 1984. Given the lack of info I am wondering if Longhandle shut down before Google was a thing.

    Minion method

@daveomak got it. My pin wheel has some play in it which allows air to bypass it when closed. I looked at that tonight and thought that I needed to tighten it. I will do so. Thanks for the advice.

Fire/Heat management- 20 inch diameter Offset

I moved my baffle/tuning plate 4 inches from the firebox and I have. 10-20 degree difference now. That is acceptable to me.

    Minion method

I am 2.5 hours into my attempt at minion. I started with a 3/4 full charcoal basket and I mixed in some wood chips. I put half a chimney of fully involved charcoal into a depression on the firebox side of the basket. All has gone well but it seems a bit too hot. I wanted to stay at 250 but it...

Longhandle Custom BBQ Pits- who’s has heard?

Forum Mates: I have looked on the inter webs and can’t find much on my backyard BBQ. Does anyone know anything about this guy? It was a Craigslist barn find from a few summers ago. She’s solid, 1/4 inch throughout but I don’t know anything else really. Just curious if the company is still...

@Preacher Man funny you should ask about tuning and baffles. It doesn’t have anything yet. We’ll see what’s needed. On that topic, where can I buy tuning plates or is that a custom fab job typically. I have a backyard 20” that needs some tuning. Here is what the OKJ looks like right now. I...

    Overnight Fire Maintenance

The tending is the most beautiful thing. When the wife asks, “are you drinking again.” It is very easy to say, “no sweetheart, I am BBQING.” And do it with a somewhat straight face.

    500$

Go to Craigslist and look for a quality smoker. Spend the time searching and something will pop. I bought a 30LX20D 1/4 inch offset for $125 :emoji_astonished:

I bought it for $650. I think I got a pretty good deal. We are painting it to make sure we get the rust off and make sure it doesn’t get worse. This sucker is a relic for sure and all in all in good shape.

    Minion method

I am going to try this tomorrow with a charcoal basket without the snake method. I am going to start with about 1/2 a chimney and dump it into a recess dig into the charcoal on the cook chamber side of the firebox. I will report back to how it works.
