Great way to do it Al. I have been doing something similar for years on different smokers and BBQ's. I just did 6 racks on Tuesday at work for everyone and they were a hit as always.

I was given two 6' pieces of 8" x 12" x 1/2" box beam. I want to build a custom smoker on a trailer to do mainly ribs with. With an internal dimension of 7" x 11" air flow over the food my get slowed down a bit. I do have a system of racks designed already.

Thanks for the welcome. I know the idea is pretty simple but those two chunks of steel weight 700 lbs.....I'd hate to waste them but my mind is made up that I'm going to figure out a way to make them work.
