No that answers everything. Thanks! This is what I thought but one of the workers at Lowes said that there was a difference between thermomters that should measure the heat in meat and those that measure the heat in smokers. It threw me a bit so I had to come and ask those in the know.
Okay, this is what I think I am reading.
1. The grates are only dangerous for the probes when hot. They do not hurt the probe while cold.
2. Don't put the thermometer directly on top of the smoker. They need to have some sort of insulation between them like a brick or piece of wood.

Okay I have no willpower and went home early today. I got home and there she was on the doorstep. My wife is four months pregnant and did not want to move something that weighs so much. Long story short, put it together and am now seasoning it as I type.
Unfortunately since I am leaving Thursday afternoon I am working late for the next couple of nights. Even worse, I will not really have access to the Internet while I am gone and will not even be able to look for new recipies for good smokes or anything. Ahhh.

I do appreciate your kind answers. I'll tell ya, for a while I was getting really mad that I didn't live near a Wally World. They seemed to have everything. :) I thought it was an East Coast thing or something.
Okay I lied. My dad learned from someone to boil the meat first and then grill it. I personally found it quite gross and will never be using that method. Some people seem to like it though.
