If you can't fit all the meat on your smoker I bet somewhere around you offers rental commercial smokers. They are available around me, I think its about $200 a day or something. Assuming you are getting paid to cater this event you would just have to add that into your cost.

Top has been open 100% from the start. I think it's actually steam from the water pan, cuz the smoke smells goooooooood. Temps started dropping so I'm 0-10-10 on bottom vents, top still 100%

The only way we can get the prices down to what we paid in the state of OH is to make it ourselves. It works out to about $3.25 a bottle depending on what we're making. Whites a generally cheaper then reds.

Yes it is very interesting and very frustrating. PA tried last year to privatize wine sales but the Beer distributors and the State employees union fought it and got the bill pulled. It basically would have scrapped the states liquor stores and sold licenses to private companies to operate wine...
