    Smoking Lamb

I live in the Middle East, so Lamb is the most widely available meat. Before I bought a smoker, I was using wood chips right over hot coals. It would burn hot (450), so the lamb only took about 20 minutes. It tasted wonderful. The I bought a smoker, and tried low and slow, but I didn't like it...

I tried that, and it worked better for the design, but still chipped off paint while taking the tape off. Happy with the overall design, but close ups show the chips I had to paint over. Trying to post pictures but having trouble.

I am building my second mini now. I love in the UAE, so I was not able to find the tamale pots. Found a steel pot that fit, but was much smaller than the aluminum pots everyone is using. Went to California this past summer, and I picked up the stuff to build another. I am using high heat engine...

I love the paint job! It's a big decision deciding what logo/ design to put on it. What was your first smoke on your new mini?

Thanks. Actually posted a picture of mine right below Dave's post. Smoked some spare ribs, and they turned out great.

Sorry about that (new to the forum). I currently live in the UAE (near Dubai). I'm originally from Los Angeles, but moved here to teach English. Barbecue supplies in general are rather scarce. Anything American will also cost an arm and a leg. For example, in all of the builds, guys were saying...

I love it Dave. It seems the hardest part of the build for me was finding the right pot. I don't have access to the right steamer pots in this side of the world (even though I am from southern California originally and the tamale pots can be found at every local mexican market. So I had to...

Here's she is. Still no basket, but ready to go. First smoke, spare ribs on June 28. Only problem is I can only find chips around here, and I had major problems with flare ups. Tried a stainless steel box, but they weren't smoking. I tried foil pouches, but they kept flaring up too quickly and...

I would love to make a basket but it's tough to find expanded metal where I live. I found those pre-formed stainless steel half moon coal holders, but I filled them and they only hold about 50 brickets. Not sure what to do.

    Smokin' in the Middle East

Only for a couple of months during the summer Gary S. Before this, we lived in Vegas for a few years, and the heat is just like that. It's been getting up to about 115-120 degrees during the day.

    Smokin' in the Middle East

My thoughts exactly Brooksy. It's not something that you see at all. The closest that you get to grilled/ smoked meat is the ribs at chili's inside of the mall (not much of an option, especially since they don't serve pork at restaurants out here, so no baby back ribs).

    Smokin' in the Middle East

Hey guys, My name's Juan, and I'm an English teacher living in The UAE (in a small city about an hour and a half from Dubai). I'm originally from Southern California, but have been here in the Middle East for about 3 years. I have always loved to grill, but didn't get into smoking until a few...
