I meant to ask, Can someone tell me why my ribs turned out so pink on the inside? I did rub them the night before and let me sit in the fridge. They were cooked all the way and were tender as could be. is it from the smoke or the rub?
It was good day cooking on the pit. 3 racks of ribs and a tritip. 5 hours of cook time at 225. I used cherry and hickory.
Put my rub on the night before and let them sit in the fridge wrapped in suran wrap.
