I was wondering if someone could give some advice. about seven days ago i purchased a brisket with the intention of making corned beef. ive had it brining for seven days now in the fridge. it was stored in a pot with cling wrap over the top. i pulled it out tonight to clean and give a good rub...
That looks great! am looking to do one this weekend. Ive been reading some people inject the meat first with a solution which helps. does anyone have any advice on this and what type of brine to use.

i used to do my ribs in the oven and loved the tenderness and fall off the bone flavour they had. Through the advice of the veterans of this forum ive learned that my favourite method is 3hours on the smoker with 1 hour in foil followed by another two unfoiled on the smoker. It has produced...
thanks for the excellent advice on smoking a turkey. am doing one this weekend for Thanksgiving ( Canada ). can anyone offer advice on injecting the turkey before smoking and if so what is the best ingrediants to use?
Excellent advice, I used the 3-2-1 method yesterday and got the texture i was looking for. excellent flavour and a ton of smoking goodness!
Am also using a little less wood over the charcol as it was a little overpowering the flavour in the past.
Also looking to use baby back ribs......first am putting mustard on them to make sure the rub sticks (membrane removed). light the smoker and wait about 30 mins till about 230. put the ribs on spray with apple juice every hour. basically do that for about 5 hours.
thanks for the good and detailed response..i opted for the Tejas smoker( i think thats it...am in London right now and cant double check) have had a little trouble intially controlling the temperature but am learning to be patient. Before i realized their was forums i was watching you tube...
