    Pollo a la Brasa

Looks great! Back in the 90's I spent a year in LA working on a project and one of my favorite places to eat was a Peruvian place. They had a dish that was some type of flank or skirt steak, lightly breaded with breadcrumbs, and severed on a bed of "thick spaghetti noodles" with a green sauce...

    Ref; Cured Smoked Meatloaf?

Hey what wrong with a bunch of beef sticks for dinner? A hunk of summer sausage, crackers and cheese has served as many dinner many a night! If I need to add veggies, that's what Bloody Mary's are for LOL The Bearloaf isn't dry because of Bear's smoking schedule, processing, etc. is design to...

    Help with my Ribs(Please)

The link above referencing Al's way is all about cooking ribs based on IT, give it a read. Also Aaron gave you IT for "done" 195 = Little pull to them, 200-205 = FOTB As for probes for checking temps we need to kinds To monitor the meat while in the cooker. I use Thermoworks Smoke and DOT...

    Humongous Ribeyes

Very nice job on the grill marks. I will take the end cap off the one that has the hunk of fat sticking up, bet that was a flavor bomb!

    Torch Recommendations For Lighting AMNPS

My kit was on the Lowes site that Sonny linked to, except it came with 2 tanks https://www.lowes.com/pd/MagTorch-Torch-Kit/50257243

    Torch Recommendations For Lighting AMNPS

I can't find the kit on HD website, but the head alone is there at $35.97 https://www.homedepot.com/p/MagTorch-Professional-Grade-On-Demand-Trigger-Swivel-Swirl-Tip-MAP-Pro-Torch-MT565C/300572289 During that F250 Bushing replacement project I spent 2 days in the Missouri summer heat, beating...

Memories of days gone by remember when

I made gravy twice this week, Once on Chili's recommendation to use left over leg quarter with butter to make some chicken gravy to go with my biscuits and then last night, the Mrs. wanted my fried chicken, mashed taters and gravy. My grandfather was a cook for the Officier's Mess in WWII. And...

    Chicken Parmesan on the kettle

I fried chicken breast for dinner last night, I tried to convince my wife to let me use Italian breadcrumbs and do them on the grill but she wanted Fried Chicken, Mashed Taters, and Gravy. I ain't one to turn down a chance at gravy, but cooking at MIL, using what passes for an electric stove and...

    Torch Recommendations For Lighting AMNPS

I use a MAP torch made by MagTorch that is self lighting. I got it at Home Depot, kit cam with 3 torch heads, 2 tanks, and plastic storage case. Same as propane, except yellow tanks, burns much hotter. Been using it for over a year, originally bought it to burn out the bushings in my F250...

First attempt at pork belly burnt ends.

Looks like you really nailed the sticky part! My wife trims the fat off everything, but she still eats a few of my PBBE everytime I make them. BTW Salad with balsamic vinegar counteracts any fat in your meal... at least that is my theory and I am sticking to it!

First attempt at pork belly burnt ends.

I foil mine in a pan midway through to help really render them down. Fat is still there but is completely melt in your mouth, it has no "firmness" to the fat at all.

    Gator Legs!

I might have to make these for the Alabama-Florida game this year

    Advice needed for pork belly

I am a BIG (both in enthusiasm and girth) of Pork Belly Burnt ends. Done "right" you are never going to completely eliminate the fat hunks in pork belly, but they are rendered to the point that when you put them in your mouth they just melt and give you an intense smoky pork flavor, there is not...

    Better than Jack Stacks BBQ

Those look good, I got a couple of packs I snagged at Costco a month or so ago when I saw some good ones and a full packer in the freezer, been dialing in the new smoker before putting $100 worth of beef in it. The beef flavored punch of beef ribs is hard to beat, especially when accompanied...

    Ref; Repurposing my Closet..

I am so jealous. We are spending a few months at the MIL, and all my smoking supplies are in one of those plastic tubs from the big box store, and that has other stuff stacked on top of it. I must say it has improved my prep routine, I make dang sure I got everything out of the box before I...
