Thanks! Is there a way to reverse sear without loosing all the seasoning? The two times I have tried it, almost all the seasoning stuck to cast iron grates. Maybe not enough oil?

Thanks for the info DS! I don't think it should be different from a pork butt at high temp but then again never did a chuckie.
