    Good job on a hard day as far as conditions go.  Nothing goes with a win better than a belly full of beer and BBQ!  Now... on to the playoffs.  Also, I guess a welding blanket won't burn eh?

    Another idea, with the fresh dough you could make some calzones with BBQ sauce, pulled pork and cheese.  Or some like hot pork pockets. just a thought.

    Although I am not an economist, pork has a negative elasticity.  It used to be viewed as a lesser choice of meat than beef, chicken lamb, etc.  When the economy is down, the demand for cheaper meat becomes greater, thus prices for pork products increase.  That is why so many competitions arose...

    I just wanted to add that you really should not smoke a bird that is stuffed.  I am not trying to criticize, it is a safety issue.  It can take too long to get above 140 degrees.  And even if the bird does get "done" the stuffing typically is not and now it has absorbed a lot of turkey blood...

    I was just wondering what everyone's plans are for New Years Eve/New Years Day.  Even with the temps around the country, it will be a good day for smoking.  Just get your smoker going, sit back and watch football.

    Need ideas

    How about some green chilli pork enchiladas.  Season the pork with some taco seasoning, wrap in tortillas, cover with green chilli sauce, top with cheddar, cover and bake.  Uncover and finish by browning the cheese.

    I haven't brined whole chicken, but have gotten good results.  In the hotter months I do use more water in the pan to keep it moist, the problem being in colder months the water pan holds the temp back a little (220).  I would suggest foiling it around 160 and spray with some apple juice or...

    HELP! Chicken Leg Problems

    Now I am not the most advanced smoker here, but when you placed the chicken on two racks, did you just about cover the entire rack?  That can shield the upper rack from the heat.  Also, I would not just rely on a one leg sample,even if it is the biggest leg if it was closer to the heating...

    First 12lb bone in butt/ need help

    My only point is that I doubt that it would even be thawed out by now.  It has only been 30 hours, in a fridge, for a 12 lb. piece of meat (ice block).
