I don't see how it wouldn't be hotter also. With big roasts that wouldn't be to much of a problem you just rotate them. But it would for the stuff I'd be using it for. I was thinking of putting a mount for the grate using 1/4" screws about 4" below the top one.

Are you just using it to maintain temperature or to catch drippings also? Some of the best ad hock sauces I've made have been from the dripping boiled down, degreased and added to the marinate or mop sauce.

Have any of you found an way to easily remove the heating rack. It comes in handy at times. It's nice to have but seems like it's in the way if you want to smoke a pork butt of turkey. I'm also looking at adding charcoal basket do any of you have the dimension of what will fit in the opening?

I'm not a new but I'm far from a pro when it comes to smoking. I have a CharGriller 2121 with a side fire box that I've modified. The box is almost airtight and have added the baffles for better heat and smoke distribution.
