The salmon came out great. Especially because I did it on a whim. Just put it on and let it go. Smoked it with a mix of Hickory and Apple. I have a pretty good mix of pellets, Cherry, Mesquite, Hickory, Apple, and Sugar Maple.
Not my recipe it acutally came from a healthy eating cookbook, but I can't remember the name right now. So you will see egg whites instead of eggs and oatmeal instead of breadcrumbs. If you want to use eggs I would cut back to 2 and see how it mixes up. This mix is already pretty wet.

Had some free time on Sunday so I decided to throw in a Meatloaf. Smoked this at 180 for an 1.5 hours than finished at 350 until internal temperature or 165. Turned out pretty good, and was able to get a good crust on the outside and nice smokey flavor.
