snack stick question
after stuffing the sticks make sure you hang them to dry--air dry to touch before smoking .. use this practice all the time when making sausage.. it will smoke alot easier..if you need to use a fan to help air dry you casings this will speed up the process -
Billbo's world famous dry rub & BBQ sauce recipe's
bill I have a rub close to yours.. here is idea .. try taking your paprika laying it on a tray in your smoker for about ahour it will absorbs the smoke and what a differents it will make..and also I added a little wild turkey for a kick in your sauce that made a differents too --good...- dnovotny

temp. control
here in northeast nebraska it's been a very cold winter, lots of snow and wind... anyway i want to smoke but it been too cold i tried and water heater around smoker,,, (it's a 100lber..) tried old blanket but it just doesn't seem to come out right.. any other suggestion on... -
Jelepeno, Cheddar summer sausage
just a thought if you use a cup or 2 of whole wheat flour alot of the pockets will go away.. -

Bradley or Masterbuilt?
