    I use one of the bbq gazebos.  Walmart sells them and it helps so much when the sun is beaming down. No danger of burning unless you have 5 ft flameups.

    Thanks Stan.  I may give that a try.  I'm doing baby backs (2 slabs) and St. Louis cuts (5 slabs) tomorrow using the 3-2-1 and the 2-2-1 methods.  I'll try to remember to take pics.  I have 2 butts on my baby now.

    I was wondering how many racks of ribs do you get on your ECB?  Do you lay them out on the grate or use a rack?  If you use a rack do you cut your slabs in half to fit the smoker?  I have done ribs in my ECB before but was only able to get about 4 racks on the two grates.  Then I bought one of...

    Yep.  That's what I did and I used lump charcoal in the pan and I use briquets and lump in the center.

    After getting the finishing sauce recipe here last year, I never use anything else.  If they want bbq sauce, I have it on the side for anyone who wants to use it.

    Good morning Mike.  I just saw your post.  When the temp when up and after you put out the fire, did you open the damper on the lid?  One of the biggest problems with ECBs is airflow, that's why we have to modify them so much.  I added a damper on the lid of my Brinkmann and got better results...
