I know that there are claims of less ash with bark removed. Both in smoking and burning firewood as a fuel. If thats something you are concerned about you may think about it...but other than that i dont see how it could have much effect either way.

Well, just an update on the smoke...and no qview, sorry! Everything turned out great...2 fatties, 2 wild turkey breasts, 2 racks of spares. First time using cherry....wow. Everything was great. 3-2-1 on the ribs and they were perfect...no detrimental effects from rubbing on Thurs night...
Haha..well no, no smoking in winter for me. I just hate batteling the Chargriller for temps. Started a UDS to try to get me through winter but i gave up on the stupid liner that was in it...i have been jonesin big time for a smoke!! haha

alot of times you can bend ribs a little to go around the edge of the smoker...cant help with a brisket...but i would think a flat by itself would fit on that size rack. If you mean a whole packer brisket you can seperate the flat from the point and smoke seperate.

If it were me, i would not only clean it...but i would hit it with a wire wheel too. I would probably start with a pressure washer good. Let it dry and then go over it with a wire wheel and try to get all the loose crap and rust off. Start fresh, and then season it good. Looks like it could use...

next time keep some baking soda to douse the grease fire...easier than cleaning out dry chemical...did you burn all the paint off your smoker?
I also find it kind of ironic the first suggestion after cleaning was to "start a very hot fire." Anyone else think that? I know what you were getting...
Glad i live in the country where i can burn anything i want wherever i please...well...at least to a point. I try not to catch anything on fire unintentionally!

If your storing it inside it will last a long time as it should all be hardwood. Personally i dont use any wood in my smoker if there is any fungus or mold on it...and i often get that if its outside under a tarp (my heating wood pile). So now i split all my smoker wood for the year when i am...
