    Smoking without a brine..

    I smoked a practice bird last weekend that was just a cheap bird that already had a solution.  I injected and rubbed it.  Turned out good.  My father-in-law, a non turkey guy even liked it!  I say that whatever you want is best!  Good luck and Happy Turkey Day!!  Sounds like you are on the right...

    Well, after about 4 hours, I couldn't seem to keep the heat in my Chargriller... (No mods yet) So I pulled the bird, it was about 155* and put in the oven.  It crisped up well and I think it came out alright.  Not just real pleased, but my wife sure is and THAT is what is important!     Smoking a 20-pound bird for an hour or two, then finishing in oven: Recipe for disaster?

    I have no idea if that would work, but I am curious about that as well.  I have the same smoker and even with the temps like they are today, I am having a hard time keeping the temps up.  I have been told I will be smoking 2 12# birds for the dinner.  Not only in laws, but a total of about 30...

    First whole chicken

    I was just wondering if I did this right.  I injected the bird, rubbed with salted butter and put on my smoker at about 250* for the last 4 1/2 hours.  I used hickory (all I had) and need it to be done soon.  I heated my oven to 275 and just put it in there.  I will check it and see how it comes...
