SO thats one of the Shoulders still unwrapped the bone in one behind wrapped and one of the Thai Black Ribs in the Foreground AND our Italian Fattay in the back getting some heat!

I think I like to load my Smoker to busting..
I made an Italian Fattay in addition to the Pork butt and shoulder and 2 racks of baby backs.. already on the smoke... this is how it happened..
1) stay up late and plan the smoke under the influance..
2) think the afore-mentioned plan was a good...
OK a little tease as things start to temp...
this was after three hours and the first spritz... Modified it a bit fron the trad 50/50 to 50% capt morgans, 20% maple syurp 20% apple juice 10% molasses I like the color and the SMELL on the Hot meat is RAD!

I'm cooking a few picnics 2and a boston butt tomorrow and only have one probe ... when do I start temping the meat?
I understand the theroy of temping the"hot" spot first..
